This sounds great. I have to get my hands on a copy and check it out. The big question for me is: can I get the ingredients? It isn’t easy to get Asian ingredients in Israel with a decent hecksher. Do you include substitution ideas for hard-to-find-kosher ingredients?

I go to Thailand as a Mashgiach to oversee Pesachdikke food production.

It is MOST frustrating to walk the streets, seeing and smelling the wonderful cuisine that is made at every corner.

Having trained in Hotel Management, I lock these two senses into memory and come home to South Africa and try to re-create dishes from memory. Mostly I dont know what goes into the food but I make my dishes with the rule: USE FOUR “S”es

Spicy (hot)

I would love to win a book on how to make Asian food in a more authentic way.

I particularly like Satay and Teryaki recipes!
